Borgo Melograno Olive Oils


VIOLINO

Violino is the fruit of the olives in the Borgo Melograno garden, 60 centenary trees. A mix with a prevalence of "Minute," as they are called in the Valdichiana region. These small olives have little pulp but are capable of delivering a sweet and intense flavor at the same time. The fruit also makes a wonderful oil as a dessert after a meal on a slice of bread!

 

CELLO

Cello comes from our olive grove (600 trees) located on terraced land that was once cultivated on the flatter slopes. Here, too, the wide variety of trees, from the Minute to the typical Tuscan varieties such as Frantoio, Moraiolo, Leccino, and Pendolino, gives the oil a fruity profile, with herbaceous, artichoke, and pronounced bitter and spicy notes. Frantoio is versatile, Moraiolo robust, while Leccino offers greater smoothness.
